Ingredients

  • 2 oz Italicus Rosolio di Bergamotto 60 ml
  • 3 oz Prosecco or sparkling wine 90 ml
  • 1 oz soda water 30 ml, preferably chilled
  • as needed ice cubes large cubes or cocktail ice spheres work well
For Garnish
  • 1 green olive optional
  • 1 thin slice of fresh citrus optional

Equipment

  • cocktail shaker or mason jar
  • measuring spoons

Method

  1. Prepare your glass: Use a large wine glass or a stemmed balloon glass—perfect for showcasing the vibrant, bubbly drink. Chill the glass ahead of time by placing it in the fridge or adding ice cubes for a few minutes before making your cocktail.
  1. Fill with ice: Add enough ice cubes to fill 2/3 of the glass. Large cubes or cocktail ice spheres work well, as they melt slower and keep your drink chilled.
  1. Pour Italicus: Measure out 2 oz (60 ml) of Italicus Rosolio di Bergamotto and pour it directly over the ice. You'll start to notice the irresistible aroma as the bergamot begins to shine.
  1. Add sparkling wine: Slowly pour 3 oz (90 ml) of Prosecco or your preferred sparkling wine into the glass. Pour gently to preserve the bubbles and keep the drink effervescent.
  1. Top with soda water: Add 1 oz (30 ml) of chilled soda water to keep the overall flavor light and refreshing. Adjust to taste if you prefer more fizz.
  1. Garnish and serve: Add your garnish—whether that's a skewered green olive, a slice of citrus, or both—to complete the drink. The olive adds a unique twist that balances the sweetness, while the citrus ties the cocktail's flavor profile together.
