Toast the White Chocolate
- Preheat your oven to 250°F (120°C). Spread the chopped white chocolate evenly on a parchment-lined baking sheet. Place in the oven for 10-12 minutes, stirring every 3-4 minutes until it turns a golden caramel color. Be vigilant during this step—white chocolate can burn quickly! The chocolate should look slightly darker than butterscotch when properly toasted. If you notice any small burned bits, remove them before proceeding as they can make your sauce bitter.
Prepare the Toasted White Chocolate Sauce
- In a small saucepan, heat the heavy cream over medium-low heat until it begins to simmer gently (small bubbles forming around the edges). Remove from heat and add the toasted white chocolate. Let it stand for 1-2 minutes, then whisk until completely smooth. Add vanilla extract and salt, stirring to combine. If using the optional sugar, add it now and stir until dissolved. For an extra flavor dimension, add ¼ teaspoon of cinnamon or cardamom to your sauce.
Brew the Espresso
- Prepare 2 shots of espresso using an espresso machine, Moka pot, or AeroPress. If using brewed coffee instead, make it extra strong by doubling the grounds-to-water ratio. The robust coffee flavor needs to stand up to the sweetness of the white chocolate. Freshly ground beans will produce the most flavorful results that complement the toasted white chocolate mocha perfectly.
Heat and Froth the Milk
- Pour the milk into a small saucepan and heat over medium-low until steaming but not boiling. Alternatively, microwave for 60-90 seconds. Froth using a milk frother, immersion blender, or by vigorously whisking. The goal is to create a creamy microfoam for the authentic coffeehouse experience. For the richest foam, use whole milk at room temperature before heating.
Assemble Your Mocha
- In a large mug, add 3-4 tablespoons of the toasted white chocolate sauce. Pour the hot espresso over the sauce and stir until well combined. Slowly pour in the frothed milk while holding back the foam with a spoon. Top with the reserved foam. Warm your mug with hot water before assembling your drink to keep it hotter longer.
Add the Finishing Touches
- Crown your creation with a generous swirl of whipped cream. Sprinkle with holiday-colored sprinkles, white chocolate curls, or a light dusting of nutmeg. For extra indulgence, drizzle with caramel sauce. Chill your whipped cream canister for 5 minutes before using for more stable, picture-perfect dollops.
