Prepare the Cold Brew
- Combine 1 cup of coarsely ground coffee with 4 cups of filtered water in a large container. Stir gently to ensure all grounds are saturated. Cover and let steep at room temperature for 12-24 hours (longer steeping creates stronger coffee). After steeping, strain through a fine-mesh sieve lined with cheesecloth or a coffee filter. Transfer to a sealed container and refrigerate until ready to use.
Make the Pumpkin Sweet Cream
- In a mixing bowl, combine heavy cream, milk, pumpkin puree, vanilla syrup, pumpkin pie spice, and salt. Whisk vigorously until the ingredients are well combined. For best results, use a handheld frother, immersion blender, or stand mixer with whisk attachment to create a foamy texture. Refrigerate until ready to use (the cream will thicken slightly when chilled).
Assemble Your Drink
- Fill a tall glass with ice cubes. Pour 1 cup of cold brew over the ice. Add 2 tablespoons of vanilla syrup to the cold brew and stir gently. Slowly pour the pumpkin sweet cream over the back of a spoon to create a beautiful layered effect (about 2-3 tablespoons). Dust with a sprinkle of pumpkin pie spice for garnish.
