Prepare The Blueberry Mixture
- Wash the blueberries and place them in a small saucepan. Add about a quarter cup of water and the honey to the pan. Heat the mixture over medium heat, stirring frequently until the blueberries begin to burst and the mixture slightly thickens, about 5-7 minutes. Remove from heat.
Prepare The Blueberry Mixture
- Using a fork or potato masher, lightly mash the blueberries to release more flavor. Set the mixture aside to cool. Once cooled, strain it through a fine mesh to remove the solid parts, capturing the flavored syrup in a bowl.
Mix The Drink
- In a large pitcher, combine the freshly squeezed lemon juice with the blueberry syrup. Stir well to incorporate.
Mix The Drink
- Slowly pour in the sparkling water, and give the mixture a gentle stir without losing too much fizz. Add lemon zest to infuse an aromatic citrus note and a dash of colorful presentation.
Serve
- Fill glasses with crushed ice to the brim. Pour the mocktail over the ice, leaving a little room at the top for garnish.
Serve
- Decorate each glass with a few fresh blueberries, a sprig of mint, and perhaps a slice of lemon on the rim.
