Prepare the Lavender Syrup
- Combine water and sugar in a medium saucepan over medium heat. Stir continuously until sugar completely dissolves (about 3-4 minutes). Add dried lavender buds to the simple syrup, reduce heat to low. Simmer gently for 10 minutes, allowing the lavender to infuse the syrup. Remove from heat and add vanilla extract if using. Let the mixture steep for an additional 10-15 minutes for a stronger flavor. Strain the syrup through a fine-mesh sieve into a glass container, pressing on the lavender to extract all flavor. Allow to cool completely before using.
Prepare Your Espresso or Coffee
- Pull two shots of espresso using an espresso machine. Alternatively, brew 1/2 cup of strong coffee or prepare instant espresso. Allow to cool slightly if making an iced version.
Froth Your Milk
- Pour milk into a small saucepan and heat until steaming but not boiling (about 150°F or 65°C). Use a handheld frother, French press, or blender to create foam. For cold drinks, shake cold milk vigorously in a sealed jar to create cold foam.
Assemble Your Latte
- Add 1-2 tablespoons of lavender syrup to your serving cup (adjust to taste). Pour in hot espresso or coffee and stir to combine with the syrup. For hot lattes: Slowly pour in the steamed milk, holding back the foam with a spoon. Top with the reserved foam. For iced lavender coffee: Fill a glass with ice, pour in the espresso-syrup mixture, then top with cold milk and any cold foam. Garnish with a sprinkle of dried lavender buds and optional honey drizzle.
