Grapefruit Champagne Cocktail

Ingredients
  

  • 1/2 cup fresh grapefruit juice about 1 large ruby red grapefruit
  • 1 tablespoon granulated sugar optional, adjust to taste
  • 750 ml Champagne or sparkling wine chilled, Brut or Extra Dry recommended
  • 4 fresh grapefruit slices or wedges for garnish
  • 4 fresh rosemary sprigs for garnish, optional
  • Ice cubes optional, for serving

Method
 

  1. Prepare the Grapefruit Juice
  2. Roll the grapefruit on the countertop applying gentle pressure to loosen the juices and maximize yield. Halve the fruit and juice it using a citrus juicer to extract fresh, pulpy nectar. Strain through a fine-mesh strainer to remove seeds and excess pulp. If you prefer a sweeter cocktail, dissolve 1 tablespoon of sugar in the juice and stir until completely dissolved. Set aside.
  3. Chill Your Glassware
  4. Place 4 champagne flutes in the refrigerator for at least 30 minutes before serving. For a quicker method, fill the flutes with ice water and let them sit for 3-5 minutes, then pour out the water and dry the glasses just before assembling the cocktails.
  5. Assemble the Cocktail
  6. If using ice, add 1-2 ice cubes to each chilled champagne flute. Measure and pour 2 ounces (1/4 cup) of fresh grapefruit juice into each glass.
  7. Add the Champagne
  8. Tilt each champagne flute at a 45-degree angle. Slowly pour the Champagne down the side of the glass to preserve the bubbles and prevent overflow. Fill each glass to about 3/4 full, leaving room for garnish. Pour gently to maintain the effervescence.
  9. Garnish and Serve
  10. Place a fresh grapefruit slice or wedge on the rim of each glass. If using rosemary, gently slap the sprig between your hands to release the aromatic oils, then place it in the glass for an herbal fragrance. Serve immediately while the bubbles are lively and the drink is ice cold.

Notes

- Quality Champagne:
Use a good quality Champagne, Prosecco, or sparkling wine. Brut or Extra Dry varieties work best for balancing sweetness and dryness.
- Sweetness Adjustment:
Grapefruit sweetness varies by variety and season. Always taste your juice before adding sugar. Ruby red grapefruits tend to be sweeter than white varieties.
- Temperature Matters:
All ingredients should be well-chilled before mixing. Warm Champagne loses its effervescence quickly and doesn't taste as refreshing.
- Serve Fresh:
Champagne cocktails are best enjoyed immediately after preparation to appreciate the bubbles and bright flavors.
- Alcohol-Free Option:
Replace Champagne with sparkling water or non-alcoholic sparkling wine for a mocktail version.
- Make It Stronger:
Add 1 oz of vodka or gin per serving for a more potent cocktail.
- Storage:
Leftover grapefruit juice can be refrigerated in an airtight container for up to 2 days.
