  • 1 whole ripe dragon fruit (pitaya) pink or red variety
  • 1 cup freshly squeezed lemon juice about 6-7 lemons
  • 1 cup sugar for simple syrup
  • 1 cup water for simple syrup
  • 4 cups cold water
  • as needed ice cubes for serving
For Garnish
  • as desired fresh dragon fruit chunks
  • as desired lemon slices
  • as desired mint leaves
  • as desired fresh berries strawberries or raspberries

Method
 

Prepare the Simple Syrup
  1. In a small saucepan, combine 1 cup of sugar and 1 cup of water. Bring the mixture to a gentle boil over medium heat, stirring until all the sugar dissolves completely. Remove from heat and allow the syrup to cool completely while you prepare the other ingredients.
Prepare the Dragon Fruit
  1. Cut the dragon fruit in half and scoop out the flesh with a spoon. Place the dragon fruit flesh in a blender and blend until completely smooth, about 30-60 seconds. For the most vibrant pink color in your dragon fruit lemonade, be sure to use the red or pink-fleshed variety rather than the white-fleshed type.
Juice the Lemons
  1. Cut lemons in half and squeeze to extract the juice. You'll need approximately 1 cup of fresh lemon juice, which typically requires 6-7 medium lemons. Strain the juice to remove seeds and pulp if desired.
Combine the Ingredients
  1. In a large pitcher, combine the blended dragon fruit, fresh lemon juice, and cooled simple syrup. Stir well to incorporate all ingredients. Add 4 cups of cold water and stir again until the dragon fruit lemonade reaches a uniform color and consistency.
Chill and Serve
  1. Refrigerate your dragon fruit lemonade for at least 30 minutes before serving for the best flavor. When ready to serve, pour over ice and garnish with lemon slices, fresh dragon fruit chunks, or mint leaves for an extra special presentation.
